High-Res MRI Scans of Fruits and Vegetables

It started with a simple curiosity as to what an orange would look like inside an MRI, but soon spiralled into a fascinating experiment involving the entire produce aisle.

Boston University Medical School technologist Andy Ellison used a Philips 3 Tesla MRI to undress food such as broccoli, corn, and starfruit. The result is a fascinating deconstruction of our favourite fruits and vegetables. After his first attempt Andy says he was “blown away by the incredible complexity that began to show itself so quickly as I went through the slices of the orange.” You can see more scans over on Andy’s blog Inside Insides.
